This is why restaurants do dry runs before opening day:
Houston firefighters hauled a few wheelbarrows of toasty insulation from the kitchen of a new restaurant this evening. Firefighters said the proprietors of Sofia’s, at the intersection of Milam and Congress on Market Square, were testing one of their new ovens.
I’d say the results were mixed.

Oneth!
Eric P. Johnson knows Sofia personally.

I’m sure he knows the installers of the oven or perhaps the firefighters who were there! Or else, he has connections who do!
This reminds of a story…
When I was (much) younger, I worked at one of the Big Eight’s consulting firms. As part of the recruiting procedures, consultants would take out recruits to one of several dining establishments to get a feel for the potential employee’s fitness for the company. My friends Paul and Dane took one to Harry’s Kenya, which had a company account. As the maitre ‘d showed them to their tables, Paul inquired about the odor he detected. The maitre ‘d said he’d check into it, and the trio made themselves comfortable at their table. Shortly after, the maitre ‘d appeared at their table, totally composed and hands clasped like a choir singer at his belt buckle and calmly told them, “I’m sorry, but I must ask you to leave. The kitchen is on fire.”
Harry’s never reopened, and P&D continued their adventure at Brennan’s. The rest is not funny unless you actually worked there.
